Mini Cupcakes
Yeah, I know you have seen cupcakes before. But It's always great to bake your own goodies. I made these little cuties for my girls and they adored them.
Recipe for the cupcakes:
250 g butter
250g caster sugar
4 eggs
250 grams self-raising flour
2 tsp of vanilla essence
Method:
Cream the butter and sugar together until pale and fluffy. Gradually beat in the eggs and add vanilla. Sieve the flour over the mixture and fold in gently using a metal spoon.
Grease your patty pan tray, and place your paper patty pans and spray them lightly with cooking oil spray.
Spoon the cake mixture into the cases.
Bake in a moderate oven (180 C,350 F) for 15-20 minutes.
Turn out of the baking tray and then cool on a wire tray before you decorate.
Butter Icing
75g butter225g icing sugar(sieved)
2tbsps milk
food colouring
Place all ingredients in a mixing bowl and mix until well mixed.
Practice piping your frosting on a plate, this will give you a great head start before you start decorating your cupcakes..and you don't want crumbs on your frosting right? |
