Chocolate Cupcakes With Peppermint Creamcheese Frosting

Choc-Mint Delight Since my lime flavored cream-cheese frosted cupcakes were a huge success,I really longed for another special moment to whip up some cream cheese frosted goodies . I baked these fabulous Choc Mint cupcakes for my husband's work colleagues.  This is a really delicious cupcake that  would suit any occasion. I baked these super rich chocolate cupcakes and topped them up with peppermint flavored cream cheese frosting . Here is the recipe for the Chocolate cupcakes. 1/4 cup unsalted butter 1cup sugar 56 grams of Milk chocolate melted 2 Large eggs 2 large egg yolks 1/2 cup vegetable oil 2 tsp vanilla extract 1/3 cup of sour cream 1 cup plain flour 1/2 tsp salt 1/2 tsp baking soda 1/2 cup cocoa powder 1/2 cup water at room temperature METHOD . 1.Pre heat oven to 350 F. Lego Cupcakes

The kid in me.... I couldn't   wait to post these pics as I really enjoyed decorating these cupcakes. This set of Lego goodies was requested by our friend, for her very playful son’s birthday...yeah... !   I got this inspiration from a Google image and the original pic belongs to  hellonaomi . Her cuppies look  really neat.  Well, I thought I should  give it a go as I  knew that the Birthday boy is a  Lego fan...  Here is the recipe for the fondant ... Vanilla Cupcakes with Lime Cream Cheese Frosting

  Hi everyone. Limes are in abundance this time of the year here in Victoria.  I baked this delicious beautiful batch of cuppies for my friends at our mothers' group. Vanilla Cupcakes Makes 24 Ingredients:  250 g butter 250 g caster sugar 2 tsp vanilla essence 4 eggs 250 cups Self-raising flour, double sifted 1 cup milk or buttermilk Have all ingredients at room temperature! 1. Beat the sugar and butter with an electric beater until pale and creamy. 2. Add the eggs one at a time beating well after each addition until just combined. add vanilla. 3. Fold in the flour and milk gently until the mixture is smooth. 4. Spoon the mixer into muffin trays which are lined with patty pan cases. 5. Bake in a moderate oven at 180C for 15-20 minutes until cooked and golden. Allow to cool in a wire rack. Chocolate Rose Cupcakes

Chocolate Rose Cup c akes Who doesn't like a chocolate cupcakes. Both young and old are sure to  enjoy a creamy chocolate cupcake. These Rose Cup cakes are pretty and easy to do with little practice. Practice piping roses on a white plate using 1M Wilton tip or regular rose tip. Start piping the swirl from the center of the cake without lifting, in one go.  For a quick delicious chocolate fix you can use a box chocolate cake mix. Recipe for  the Cupcakes Ingredients 1 box chocolate cake mix 1 cup butter milk instead of water  1/2 cup vegetable oil as per box  4 large eggs 1. Pre heat the oven to 175C. Line the muffin tray with patty-pan cases. 2. Combine all the  ingredients in a large bowl. use the buttermilk instead of water(the recipe on the box calls for water).  3. Beat with an electric mixer until moistened , about 30 seconds. Increase the speed to high and beat until thick, 2minutes longer. 4.Spoon the batter in to cases  two thirds full.

Mini Cupcakes

  Mini Cup c akes Yeah, I know you have seen cupcakes before. But  It's always great to bake your own goodies. I made these little cuties for my girls and they adored them.   Recipe for the cupcakes: 250 g butter 250g caster sugar 4 eggs 250 grams self-raising flour 2 tsp of vanilla essence Method: Cream the butter and sugar together until pale and fluffy. Gradually beat in the eggs and add vanilla. Sieve the flour over the mixture and fold in gently using a metal spoon.   Grease your patty pan tray, and place your paper patty pans and spray them lightly with cooking oil spray. Spoon the cake mixture into the cases. Bake in a moderate oven (180 C,350 F) for 15-20 minutes. Turn out of the baking tray and then cool on a wire tray before you decorate.
