Chocolate Cupcakes With Peppermint Creamcheese Frosting


Choc-Mint Delight

Since my lime flavored cream-cheese frosted cupcakes were a huge success,I really longed for another special moment to whip up some cream cheese frosted goodies . I baked these fabulous Choc Mint cupcakes for my husband's work colleagues. 











This is a really delicious cupcake that  would suit any occasion. I baked these super rich chocolate cupcakes and topped them up with peppermint flavored cream cheese frosting .




Here is the recipe for the Chocolate cupcakes.

1/4 cup unsalted butter

1cup sugar
56 grams of Milk chocolate melted
2 Large eggs
2 large egg yolks
1/2 cup vegetable oil
2 tsp vanilla extract
1/3 cup of sour cream
1 cup plain flour
1/2 tsp salt
1/2 tsp baking soda
1/2 cup cocoa powder
1/2 cup water at room temperature

METHOD
.
1.Pre heat oven to 350 F. Double sift the dry ingredients(flour,cocoa powder and salt) and set aside.
2.Melt Chocolate in a double boiler or in an microwave oven.And set aside.
3. Mix butter and sugar until fluffy.
4 Add the melted chocolate into the butter mixture.
5. Mix in eggs and the yolks one at a time until just combined
6 .Mix in oil, sour cream and vanilla until just combined.
7 .Add the sifted dry ingredients in three additions.
8.Mix in water until just combined.
10.Fill your cupcake cases and into the oven.
11.Bake for 18 minutes. do the toothpick check for readiness.
12. Transfer your baked goodies immediately on to a cooling rack. 






These chocolate cupcakes freeze really well.




Cream-cheese Frosting



For the cream-cheese frosting , you will need

 1/2 cup butter, softened
8 oz. cream cheese, softened
1 cup powdered sugar(sifted)
1/2 teaspoon vanilla
1/2 teaspoon peppermint extract
2 tbsp heavy cream

Blue and green food colouring (gel paste)

Beat all the above ingredients light and fluffy . Using toothpicks dab some blue and green gel paste or use  regular green food colouring.

Frost your cupcakes and top  an Oreo cookie on each cuppy just before serving. Or you can use some chocolate chips to top them up.

School Project:THE FOUR SEASONS

  THE FOUR SEASONS Diorama Here 's how we went about doing our school project; the four seasons. YOU WILL NEED: A sturdy board for the base . Styrofoam  Brown paper /bag Coloured paper Cotton wool PVA Glue Glue gun Some paint B egin by fixing the Styrofoam on the sturdy board.  Use your glue gun to glue it  in place. Paint the backgrounds; Spring -green, Autumn -yellow brown and orange , Summer- yellow and blue.,winter we left it white/ silver. We used the brown paper to make the trees. Cut out flowers and leaves out of colored paper. We glued the trees, leaves flowers and cotton balls-use your glue gun for this. SPRING AUTUMN WINTER Cut out few slits to form branches twist the slits... Finally,  glue the Arctic Hare in each season and show how they adopt to each season!.
