Custard Buns

 Custard Buns

I came across these soft, sweet and delicious custard buns which are available at my local shopping centre, from BON BON bakers, they were so lovely and I wanted to give it a go.

This recipe calls for a basic sweet dough, and custard is used as a filling.

Sweet Dough

Bread flour 500g
2 Eggs
50 g Butter
3tbsp   caster Sugar
1tsp Salt
2 1/2 tsp dry yeast
1/2Luke warm Water+ 1/2 cup warm milk

 Custard Filling

40g Sugar
2 eggs
20g plain flour
20g corn flour
210g milk
40g butter
1/2 tsp salt

For the Filling
To make the filling sift plain flour and corn flour..
Mix well with beaten eggs.
In a saucepan heat milk, sugar and salt and stir.
Add the egg mixture and stir until thickens remove from heat and stir in butter and chill.

Reserve 60g of custard in a squeeze bottle (I used a squeeze bottle instead of a piping bag) for the spirals.

For the Buns
Combine all dry ingredients in a bowl.
Make a well in the centre. add the milk mixture and lightly beaten eggs, along with the softened butter and mix well.
Knead it really well.
Place in a bowl and cover with cling film.
Let it rest in a warm spot until it's doubled in size usually in 1-2 hours.
Once the dough has risen, knead the dough and transfer it to a floured surface.
Divide the dough into equal portions.
Roll out each dough and place 1.5 tbsp of the cream custard on top. Seal the side by gathering the ends and shape it until it forms a ball.
Place the ball on a greased baking tray. Cover buns with cling film. Leave the buns to rise for around 1 hour.

Brush the buns with a beaten egg.

Mark the spirals on your bun using the end tip of a brush so that it will be easy to pipe custard spirals. Pipe custard spirals around the buns using a squeeze bottle filled with custard.

Bake at 375F for about 10-12 minutes or until golden brown.

Give them a go, my kids loved these lovelies!
