Savoury Buns
Dough :
Ingredients
1/2 cup Milk
1/2cup water
3 tbsp unsalted butter
4 cups flour
2 1/2 tsp active dry yeast
3 tbsp sugar
3 eggs beaten
2 tsp salt
(1 egg beaten with 2 tbsps water, for egg wash)
sesame seeds(optional)
Instructions
- Prepare a warm water mixture: In a small saucepan, combine the milk, water, and butter. Warm over medium heat until butter is melted. Cool for about 5 minutes, or until the temperature is 120-130 degrees F.
- In a large bowl combine 2 cups of the flour, the yeast, sugar and salt. Add the warm water mixture, followed by the beaten eggs, (mixing on low speed if using an electric stand mixer fitted with a dough hook which makes the job pretty easier!).
- Add the remaining flour 2 tablespoons at a time (while mixing on medium-low speed until dough almost clears the bowl) and is only a slightly sticky to the touch (It's okay if some dough sticks to your fingers). You may not need all of the remaining flour, or you may need more than is called for. Knead until smooth and elastic, about 5-7 minutes more.
- Gather dough into a ball and place in a greased bowl. Cover with cling wrap(Spray some cling wrap with cooking spray ) and put in a warm place and allow to rise until doubled, 1 to 2 hours.
- Punch down dough and let rest for a few minutes. Divide dough into eight equal pieces and shape into balls.
- Grab a ball flatten it with your fingers into a disc..spoon your curry filling in the center.
- Now bring the border together into a bundle.Turn it over, place filled buns on a sheet pan lined with parchment paper.
- Spray cling wrap with non-stick cooking spray and place over the shaped buns. Return to a warm place and continue to rise for an additional 30 minutes to 1 hour.
- When ready to bake, preheat oven to 400 degrees F.
- Brush buns with egg wash and sprinkle with sesame seeds, if desired.
- Bake until golden brown, about 10 minutes. Cool completely on a wire rack.

In order to keep your buns soft, here's an important tip,
Right after taking the buns out of the oven dab some butter on the buns and keep them covered with a tea-towel for a couple of minutes to soften.

Curry Filling
Curry leaves
Onions 2
Garlic 2 Tsp
Mince Meat 500g
Red Chili powder(1-2 tsp,
curry powder (1 tbsp)
turmeric powder(1/2 tsp)
paprika 1-1/2tsp )
Tomato paste
Salt
Worcestershire sauce 2tbsp
Black pepper powdered 2tsp
Saute the onions curry leaves along with the crushed garlic. Add salt. When onions are softened add the mincemeat, turmeric powder, chilli powder, paprika powder, curry powder. Then add the tomato paste. You could add green chillies as well. Cook for a couple of minutes until done.
